From what I see in the text book, I think you need to sweep $\delta$ from -0.8 to 50 and plot Vo versus $\delta$.

On the last part of the prelab, what is the _ supposed to be in the "Plot Vo vs _." sentence?

Yes. You can look up these values from the datasheet, it should help you to design the Triple Opamp IA in a more efficient way based on the transfer function that you derived.

Is the the low frequency gain and 3 db frequency charcteristics of the op amp that we have to look up on a datasheet?

There are a few typos in Lab 2:

1. In part 1 (b), $\alpha_{dc}$ is the low frequency gain and $\omega_b$ is the 3-dB frequency
2. In part 3 (a), design an integrator with $|gain|= 20$ and a differentiator with $|gain|= 20$.

Note that I have changed the problem definition for 3(a). If you have already designed with another gain value, you need not rework the design (although it just involves changing the resistor value).

Here is the link to the ECEN 325 lab manual. The design procedure should be helpful.

On part 3a, it says 10 little 3 and 10 minus little 3 for the gains. Is that 10^3 and 10^-3?

Check ECEN 325 lab manual for the design of different op-amp circuits like summer, integrator, differentiator, etc if you need to refresh your memory! It should be fairly straightforward.
